4 sweet potatoes (about 2 1/2 pounds), cut into 1 1/2-inch pieces 4 cups V8 V-Fusion® Acai Mixed Berry Juice 1 tbsp. packed light brown sugar 1/4 cup nonfat sour cream
Heat the potatoes and juice in a 4-quart saucepan over medium-heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the potatoes are tender. Drain, reserving the liquid. Mash the potatoes with 1/4 cup of the liquid, brown sugar and sour cream. Add the remaining liquid, if needed, until the potatoes are the desired consistency.
